what are the differences (in gaming mostly) between xtreme music platinum elite pro and whatever other version they make with the X-Fi chipset

The only difference between the Xtreme Music and the Platinum is that the Platinum has the front panel and the remote. The sound cards themselves are exactly the same.

The difference between the Fatal1ty FPS and the Platinum is just that the Fatal1ty has 64MB of XRAM to store sound data.

The elite pro also has 64MB of XRAM, but has a more advanced external controller panel.

The fatality has Full EAX when the others dont. Very important if you want to play games

Full EAX? All the x-fi have EAX 4.0 and 5.0. What do you mean by full?

I'm not sure what you're talking about. All of the sound cards themselves are exactly the same except the 2 higher models have 64MB of XRAM. All your really paying for is that extra RAM and the type of external box and software your receiving.
